My husband took the reins on the menu choices (since it's his mom), and he killed it. I suggested he take a look at Minimalist Baker, since her recipes are all less than 10 ingredients and really easy (and delicious), and he said he had very hard time picking just one recipe! He settled on the Crispy Peanut Tofu & Cauliflower Stirfry, and it was SO GOOD. Neither of us had had cauliflower rice before, and to be honest I used to think that it was stupid and that people only ate it because they were afraid of carbs. HOWEVER, it was delicious and I totally get why it was used in this recipe - it was light and created the perfect base for the veggies and sauce.
Also - the leftovers were awesome, as the cauliflower rice didn't soak up all the sauce the way a regular rice would. I was pleasantly surprised at how good it tasted reheated the next day.

For dessert, I made Cashew Cheesecakes (also by Minimalist Baker) earlier in the week so we didn't have to worry about making dessert the night of. I also made these for when my parents came over for dinner, and they were such a hit and they're great because you can make them in advance and they stay fresh in the freezer for up to two weeks. This time I made MINI ones, and I would highly recommend!!
