Pineapple 'Fried' Rice

This has quickly become a go-to meal for me. It's based off of Bonny Rebeca's recipe called No Fry Rice, from her e-book Carbolicious. 

It's SO SIMPLE and quick to make. 

Here's what you'll need:

2 cups of jasmine rice, 1 head of broccoli, 2 carrots, 1 tin of chunked pineapple, 1 container of sliced mushrooms, a handfull of green onion, and teriyaki sauce. 

While your jasmine rice is cooking, add the broccoli, half the green onion, and the diced carrots to a non-stick pan. Cook them on medium-high adding a splash of water whenever they start to stick to the bottom. After about 5 minutes add the mushrooms (I like to cut them into strips first), and continue to stir the veggies. After another 5 minutes has passed, add the chunked pineapple and the teriyaki sauce and stir for about 3 minutes - when you're finishing up add the rest of the spring onion to the mix. 

Your rice should be finished at this time, so go ahead and add it to the veggies. Stir it all together, and you're done!

Easy peasy, and SO GOOD!
