Such a classic, and I'm pretty sure everyone knows how to make it...but it doesn't hurt to be reminded of just how good vegetable stir-fries can be. You don't need meat once you've piled on a ton of veggies!
Just boil the rice of your choice (I usually use jasmine for this), sauté your veggies (e.g. celery, peppers, carrots, snow peas, corn, etc.), and near the end throw on the sauce of your choice (I prefer a low-sodium teriyaki) to coat all of your vegetables. Pour your vegetable mixture over the rice, and you're good to go! Toss some sesame seeds and fresh green onion on top, and you'll look like a master chef. Easy peasy.
